Winner at the Scottish Style Awards!


On Saturday evening, Rusk & Rusk HQ attended the Scottish Style Awards at Kelvingrove Art Gallery and Museum. Celebrated in association with Moet & Chandon, the evening honoured several inspirational individuals and enterprises. The night was a smashing success.



The Spanish Butcher was named ‘Most Stylish Restaurant’ 2018 succeeding Hutchesons City Grill who won the coveted award in 2015. This is a huge achievement for RUSK & RUSK.







Hosted by Pollyanna McIntosh, the night began with a delicious 3 course meal and champagne flowing. Filled to the brim with the finest food and drink, anticipation began to build as each of the awards began to be announced.




When the category of Most Stylish restaurant was announced, we were thrilled to be announced as the winner of Most Stylish Restaurant in Scotland. Being up against some incredible nominees, we were truly honoured and humbled to receive such an incredible award.






As the night continued, Rusk & Rusk HQ celebrated and enjoyed the rest of an incredibly stylish and exciting evening. From a fashion show by Harris Tweed, to an electrifying after party, it’s safe to say, we ended the night on an absolute high!

This coming March, Rusk & Rusk are proud to announce that co-founder, Louise Rusk, will be an ambassador at the first ever No.1 Amazing Women Awards. Recognising inspiring women around Scotland, the event coincides with International Women’s Day and is set to be filled with many well-deserved recognitions.

No.1 Magazine is set to celebrate everything that strong Scottish women stand for. From kind gestures to building empires, all the women involved with the event are truly inspiring, which is why the publication has chosen to recognise them with a special evening. Speaking of the awards, Louise stated:

“There are so many great things that women are doing and they often go unnoticed. These awards are creating awareness, and, at the same time, congratulating women for what they have achieved in whatever particular area that award is for.

I love that each award is different. You have business achievements and community spirit; amazing women come from all walks of life. It’s a great mixture and I think it’s important that they’re recognised for their achievements.”

Rusk & Rusk Set To Host VIP Event For Fashion Designer Hayley Scanlan

This Thursday, Rusk & Rusk is delighted to host a pop-up shop in the 158 Club Lounge for renowned Scottish fashion designer, Hayley Scanlan. Named by Vogue as “Scotland’s Coolest Young Designer” and winner of the “Young Scottish Designer of the Year” at the Scottish Fashion awards 2012/2014, Rusk & Rusk are thrilled to collaborate with Hayley on this event.

A Look Back At Halloweens Hottest Event When Party Goers 'Met The Widow' At Hutchesons!

As it neared the end of October, the approach of All Hallows Eve was looming over Rusk & Rusk HQ. It was once again time to ‘Meet The Widow’!


Described as “One of the hottest Halloween parties in the UK” by Marie Claire, the second instalment of this ghoulishly glamorous event did not disappoint. Transforming Hutchesons City Grill into a decadent yet eerie haunted mansion, Rusk & Rusk teamed up with Veuve Clicquot once again to present Glasgow with the most outrageous Halloween party of the year.

Giving the guests a real scary welcome, James Rusk kicked off the night with amazing energy and in true Rusk & Rusk fashion. With a ‘Day of the Dead Masquerade’ themed makeover, staff and guests truly embraced the theme and went all out to look stylishly spooky. Starting off the night with an amazing 3 course dinner, guests were treated to some amazing dishes, including deliciously smooth Curried Cauliflower and succulent Slow Cooked Crispy Ox Tongue, all topped with a crisp glass of Veuve Clicquot.


As the night progressed, visitors were treated to some first class entertainment, including creepy actors, a Thriller flash mob and a tarot reader. There was also a pause in amongst all of the excitement for a Day of the Dead procession, where everyone honoured the dead and rose a glass to the first lady of champagne, Widow Clicquot. This was then rounded off with an incredible performance from an authentic Mariachi band!

Our resident DJ Elisha then played us into the rest of the night with a mix of haunted hits, disco, house and funk, where the glasses of veuve continued to flow. Rusk & Rusk smashed this event once again, by going even scarier and bolder than last year, and it’s safe to say, everyone left tantalizingly spooked and filled to the brim with the finest quality food and champagne.

Killer Heels & Cocktails Raises £79,000 for Action Medical Research!

On Friday, November 3rd, Glasgow's most glamorous ladies lunch fundraiser took place at The Grand Central Hotel with the aim of raising funds to support the important research that Action Medical Research carries out, generating a staggering £79,000 in donations.

As the events main sponsor, Rusk & Rusk worked closely with the Killer Heels & Cocktails committee to put together an occasion that will remembered for years to come; from start to finish, the event was a non-stop hit! 

Rusk & Rusk co-founder, Chair of Killer Heels & Cocktails and Scottish Ambassador for Action Medical Research, Louise Rusk, kicked off proceedings with heartfelt speech extolling the importance of the work the charity carries out. From there, Heart FM's Paul Harper, took to the stage to host the event, with acts including Vegas Showgirls and smooth crooners The Brothers of Swing getting the party atmosphere going, before The Jersey Tones took to the stage with their take on classic hits from award winning musical Jersey Boys! 

There was an extraordinary vibrant live auction, which alone raised thousands of pounds, as well as a digital silent auction, raffle, Guilty Pleasure mystery bags and, of course, a seriously glamorous Star Prize in the form of Christian Louboutin shoes which was kindly sponsored by Cruise Fashion

But the real star of the day was the amount of money raised; a whopping £79,000. Action Medical Research is at the forefront of medical research into premature birth, diseases and disabilities that affect countless babies, children and families. The charity predominantly relies on the donations and contributions of individuals and companies to help fund new medical breakthroughs. The sum raised will prove pivotal in helping support the ongoing search for the best medical research to help save and change children’s lives. 


A massive thank you to everyone who attended, to everyone who contributed and we simply can't wait until 2018 to do it all over again!

Rusk & Rusk support the STV Appeal once again!

On Friday, November 3rd, The STV Appeal took place live from their Clyde-side studios to once again raise important funds and generate awareness for the thousands of vulnerable children currently living in poverty across Scotland.

As usual, Rusk & Rusk were on hand with team members from across the groups restaurants on hand to serve up complimentary cocktails for those in attendance on the night! Shaking up sweet treats for the guests at the STV appeal has become something of a tradition for Rusk & Rusk with this marking the 4th occasion we've been there to lend a hand and keep the atmosphere on point! 

The STV Children's Appeal was launched in 2011 by The Hunter Foundation and STV. They came together to raise funds and to help make a real difference to those who need it most, by providing practical help like food and warm clothes; creating opportunities for training and employability; and enabling social and emotional support.

Supporting children charities is at the core of Rusk & Rusk's charitable ethos, and on the same evening the company were the main sponsor of the glamorous Killer Heels & Cocktails fundraiser which supports the work of Action Medical Research, helping raise £79,000 on the day! It simply wouldn't be a true Killer Heels event without an appropriately themed pair of 'Killer Heels' for the Star Prize, and this year guests can win a gorgeous pair of Christian Louboutin heels, complete with style consultation at  Cruise and finished off with a gorgeous Bubbles & Brunch at Hutchesons. And if all that wasn't enough, there's an epic list of raffle prizes to be won, the hilarious 'Be Honest!' quiz and a selection of fantastic gifts to purchase from the Guilty Pleasures stall!

Rusk & Rusk are never one to shy away from supporting causes close to their heart, from the STV Appeal to Cash For Kids and the Glasgow Taxis Outing Fund, to name but a few. However on this occasion, there's a deeper involvement for the pioneering hospitality group, with co-founder Louise Rusk becoming the events Chair as well as the Scottish Ambassador for Action Medical Research. 

Discussing her motivation behind taking up the mantles of Chair for the event and Ambassador for the charity, Louise tells us: "The work that Action does in supporting the critical first stage in the research & development of ground breaking medical innovations, and ultimately investing in the people who have potential answers and solutions to a whole range of diseases, illnesses and ailments is so important. Supporting children’s charities personally means so much to me to me, and Action Medical Research deliver real and lasting change to the lives of so many children and being able to play a part of that is such a privilege."

This years event sold out in record time and features entertainment in abundance. Host for the day, Paul Harper of Heart FM, will kick off proceedings with his typically cavalier and humorous way, with glamorous dance troupe The Show Girls, crooners The Brothers Of Swing and the famous Jersey Tones on hand to dish up an afternoon to remember

RUSK & RUSK Create Bespoke Experience For ROX AW17 Magazine Launch

This October, luxury diamond jewellers ROX launched their brand new AW17 magazine at a glamorous dinner hosted in the stunning 'Thrill Room' located in their Glasgow store. To make sure the event was executed to the highest standard, ROX brought in the services of Rusk & Rusk to create an utterly bespoke dining experience for their guests...a big, exciting challenge which was a huge success.

Rusk & Rusk are no strangers to events, boasting endorsements for their in-house events from Grazia, Candid Magazine and Marie Claire to name but a few. However, external event support is a relatively new addition to the companies profile for 2017, and executing the ROX AW17 Magazine launch was another feather in the cap.

The Food

The chef team at Rusk & Rusk were given the task of creating a bespoke 3 course, astrological themed menu that complimented the products on show at the event. Vietnamese rolls with wild flowers, yuzu & ginger dipping sauce were up first; a gorgeous fusion of intricate flavours with bold presentation. For the main course, seasonality was king, and the chefs served up aged loin of Highland venison with celeriac espuma, girolles and cocoa game jus; Scottish provenance at its finest. No dinner is complete without dessert, and guests were treated to a chocolate delice with white chocolate nougat, black cherry sorbet and cocoa nibs in a distinct sun/moon mould.

Dressing the room was a glorious task; the Thrill Room at ROX is a truly stunning space and so the mandate was to simply accentuate that beauty. A classic, glittering table decor of white linen and sterling silver complimented the crystal stemware. 

The Entertainment

Once again, ROX delivered a stellar event programme, and throughout the evening guests heard from managing director Kyron Keogh as well as the guest editor and stylist of the issue, Lynne McCrossan who discussed some of the key pieces of the season whilst they were passed around the room for all to lust over!

With a number of marquee events on the horizon, it's going to be a busy winter for Rusk & Rusk!

This October, Rusk & Rusk were delighted to create a bespoke dining experience for the official launch of ROX AW 17 magazine: The Frost Edition. From dressing ROX's Thrill Room at their flagship Argyle Arcade store on Glasgow's Buchanan street, to creating a bespoke, astrological themed menu, this was a luxury event of gorgeous distinction.

Louise is one half of leading hospitality business Rusk & Rusk. Continually coming up with new and exciting ventures Louise is known for her forward thinking and dynamic approach in Glasgow’s restaurant scene.

Q: What is an average day like for you living and working in Glasgow?

LR: I’m an early bird as I have kids, so I’m up at about 6am when I try to get a window of quiet time to get organised. I live in Helensburgh, so by the time I leave I’m usually in town for around 9:30am. There’s a lot of manoeuvring when it comes to hospitality, so organisation is key. Especially nowhaving 120 staff throughout the three companies- you have to ensure that everyone is at the top of their game. Then of course there’s lots of phone calls, meetings and having to keep in touch with the team to ensure everything is ticking over. No two days are the same, which is the beauty of this business.  I usually get home about 7pm at night, get the kids sorted and then another hour of work before Netflix. It’s important to switch off.

Q: Tell us a little bit about your career…

LR: I actually started out in the fitness industry. I was also a pro-Irish dancer, before moving into hospitality with my husband, James. Glasgow has been great to me. It’s a city that embraces change through art, design and fashion. It’s a beautiful and all encompassing city. It has something for everyone.

Q: What do you think of Glasgow’s social scene?

LR: I love Glasgow. I think it’s one of the most vibrant and energetic cities to be part of. The saying ‘People Make Glasgow’ is so true- the whole foundation is based on everyone working together, whether it’s businesses or locals to make it a really great place. I first arrived 13 years ago and have loved every minute.

Q: Can you recommend any hidden gems?

LR: Glasgow has lots of gems! It really has something for everyone. Whether it’s wandering down Buchanan Street to check out the shops or visiting Mitchell Lane with its secret bars and The Lighthouse (with the best views of the city). Miller Street is also definitely a hidden gem. I think it used to be have a real scene which disappeared. But it’s making a real comeback! With hot spots like The Spanish Butcher, Paesano and Virginia Court- there’s lots to choose from. I also think Mitchell Street is also one to watch.

Q: Top tips for tourists?

LR: Buchanan Street and Ingram Street for some of the best shopping in the UK! You’ll be spoilt for choice. Glasgow architecture is stunning - it’s one of my favourite things. I don’t think people really think about it, but you’ve got to walk around with your head looking up because the architecture in the city is amazing. It’s a really unique city with a lot to offer.

Q: What is your favourite thing about your city?

LR: It has everything you could ever need. From bars and shops to galleries and beautiful city parks. It’s all done really well. There is also always something happening. It’s hard not to get caught up in everything. There’s a city vibe, like with London or New York- it’s the same buzz. It’s party of life to go out and enjoy all that the city has to offer. For me, that includes eating and drinking with family and friends- the perfect night out! It’s exciting to be part of it. The changes that have happened since we started out seven years ago are incredible! I can’t wait to see what happens next!

Q: Plans for the future?

LR: Always growing. We are in plans to open a new venue in early 2018, so watch this space…

James and Louise Rusk are dynamic, energetic and glamorous to boot. James began his career as a coat-check boy, working his way up to Balthazar restaurant in New York, while Louise was once named Young Scottish Entrepreneur of the Year – the couple is now behind lifestyle and restaurant brand Rusk & Rusk. Their three award-winning eateries specialise in prime steak from both Scotland and as far afield as Galicia: Hutchesons City Grill, The Butchershop Bar & Grill, and The Spanish Butcher. Here they reveal why the only way is up for their mini-empire...

What makes a restaurant great?

James: In this day and age, it’s a whole journey. It’s about evoking a story before customers arrive – through media and photography – and then continuing the journey when they arrive with the food, service, atmosphere, lighting, décor and music.

What’s so good about Scotland’s food scene?

James: The Scots have always been real fashion-seekers who crave new things. People have travelled the world and learned skills which they’ve brought back to Scotland.

Louise: The country has more to offer than ever, with so much good provenance. 

Which chefs do you most admire and why?

James: Those with real taste and an understanding of visuals as well as the flavour, like Thomas Keller.

Louise: It’s about personality, individuality and getting the concept right. We love New York hospitality group AvroKo.

How important is branding to Rusk & Rusk?

Louise: Our restaurants are all very different, but customers know exactly what they’ll get: quality, stylish spaces and good food.

James: We both recognise where we started and what made us tick, and we build that into our restaurants. You need integrity and to keep the core ethos intact.

What’s special about your 130 staff?

James: It’s the world’s biggest cliché to say the customer has to feel like king, but it’s true. So our staff are instilled with the idea that only they have the power to make people feel great. It’s not me and Louise, it’s them.

Louise: It’s important that we lead by example and provide the tools to help the team grow in confidence. When they understand what you’re trying to achieve through your values, you come to a perfect partnership. 

Which dish are you most proud of?

Louise: Our great Scotch egg collection.

James: At Hutchesons City Grill, it’s our beautiful prime Scotch beef, egg and caramelised cauliflower purée.

What has been your most memorable meal?

Louise: When we bought our first flat together and cooked dinner for friends. I made a Jamie Oliver steak pie and it was bloody good. It was such a special time; we had no idea about the journey we were about to start.

James: It’s also when I discovered Louise’s love of potato! 

Who does most of the cooking at home?

Louise: We both love it, so we fight over who cooks when guests come over.

James: I do a big family Sunday roast every weekend – with many potato dishes! Our oven has loads of doors, because of course you need to balance cooking the croquettes with cooking your roasties, mash and gratin.

Who are your dream dinner party guests?

Louise: I’d have Facebook’s cool feminist Sheryl Sandberg, Michelle Obama and Anna Wintour. Closer to home, I’d have Judy Murray. 

James: I once wanted to be a rock star, so I’d want Jimmy Page from Led Zep and Eddie Vedder from Pearl Jam. And the ultimate entrepreneur, Sir Richard Branson.

What’s next for Rusk & Rusk?

Louise: We’re working on our fourth Glasgow restaurant, which is going to have more of an international feel.

James: We’re hopefully building blocks to grow into something really substantial. We want to expand internationally and go into different markets like lifestyle and retail, with a brand that our customers really engage with.

What about opening a restaurant in the capital?

Louise: It’s a massive aspiration of ours, and we’re working towards it. When we do come down to London, we want to be totally ready.

James: The next couple of years are going to be very big for us, there’s no doubt...

Rusk & Rusk co-founder, James Rusk, talks to SLTN on the importance of EPOS systems

Q: Which type of EPOS system do you currently use? What changes have advances in payment technology brought about for your business?


A: Currently we use an ICR Touch Screen system supplied by Alliance Till Systems; it’s fast, efficient and lets us use different technologies such as tablets and remotely accessed computers to process data. It gives great flexibility, allowing us to tailor our setup to the individual demands of our different venues. At Rusk & Rusk our aim is to give our customers a great experience throughout their visit, and this includes the payment process; from using the latest card machines to exploring how we can implement systems such as Apple Pay and PayPal, which are important tools to execute that great customer experience. 

Q: In your view, how important is the right EPOS system to today’s licensed trade?

A: Its importance is pivotal. Restaurants, hotels and bars all need to operate as a finely-tuned, well-oiled machine and that means all the cogs need to be working in harmony and at maximum efficiency. 

Delivering great food and world class customer service are two key components of the ‘customer journey’, but it can all be undone by a clunky finale to their visit. Ensuring smooth, effective transactions demonstrates professionalism and it’s something we always strive to deliver.

Rusk & Rusk Reflect on Their Bubbliest Summer Yet

This summer, Hutchesons City Grill hosted 5 summer parties in association with Veuve Clicquot, each one proving to be undeniably successful. The continuous triumph of Rusk & Rusk’s Summer Parties are a testament of the entire Rusk & Rusk team. The first two parties of the season set the tone for the rest of the summer, showing Glasgow and beyond that Hutchesons is the place to be for an afternoon full of bubbles!

The buzz of the previous parties challenged Rusk & Rusk to make them even bigger and better, bringing them to the decision to have the last three summer parties as themed rendezvous. The combination of the Veuve Clicquot branding, the new-look Hutchesons City Grill and the 60’s ‘Summer of Love’ theme provided the perfect back drop for the first summer party since the refurbishment. From a Camper Van Photobooth, to classic swinging 60’s hits, the day was filled with some amazing entertainment topped with stunning champagne!

Rusk & Rusk’s fourth Summer Party proved to be a real hit, where they decided if ‘It Was Acceptable In the 80s,’ then it was acceptable for Hutcheson’s fourth summer party of the season! With disco balls, rubix cubes and vinyl records decorating The City Grill, guests were treated to some retro entertainment. The music was so good that people were on their feet, dancing like it was 1989!


For the final Summer Party of the season, we took our guests to Tinsel Town for a champagne bash like never before! Co-inciding with the September weekend, the final Summer Party was a smash success as we combined Champagne with Hollywood – a glamorous match! From James Bond to Footloose, our resident DJ Elisha provided some classic movie soundtracks. We also served up our most outrageous menu yet, including Baby Venison Hotdogs and Peanut Butter & Jelly French Toast. Proving to be the most stylish of them all, this summer party ended the series with a bang!

The summer may be over but the party will continue… watch this space!

A Tuscan Takeover: Louise Rusk to host Scottish Mothers Collective’s Instagram Live From Italy


If there’s one thing we love to champion at Rusk & Rusk, it’s sourcing the highest quality products for our restaurants. That’s why this week, group co-founders, James and Louise Rusk are travelling to Tuscany, Italy, with their expert wine suppliers Bibendum-Wine to explore the regions famed vineyards in search of world class additions for the groups wine lists.

Describing the trip, Louise Rusk tell us that "this is an opportunity to build new relationships with both burgeoning and established producers, as well as increase our knowledge of such an important region for food & wine". 

The trip will include visits to the likes of Fressinello in Giuncarico Scalo, Castello Banfi (also known as the Castle of Poggio alle Mura) and Castellare di Castellina. Each location will offer the highest quality wines for them to taste for themselves, as well as some insight into the history of the landscapes that the vines are grown on.

The Diary of a Marketing Intern: by Emily Jane Slade

When I reached the end of my 3rd year at University, the dreaded fear of having no experience when graduating the following year began to dawn on me. I’ve known so many graduates who have the greatest brains who did very well at University, but struggled to find a job at the end due to their lack of experience. This always stuck with me, and I knew that I wanted to have some sort of experience before graduating, no matter how big or small.

When I first applied for the Marketing Intern position at Rusk & Rusk, I recall reading the description of the role and thinking it appeared challenging, but that was exactly what I wanted. I wanted something that would push me to grow and understand the marketing sector, but also allow me to flourish in the process, and that’s exactly what I got.

The interview process included an initial one to one interview followed by a presentation in front of the head of marketing communications, Gordon, along with co-owners James and Louise Rusk. The concept of the presentation made me nervous, but going in knowing I’d done my research and then experiencing the friendliness of the team immediately put me at ease.

When people say to you that experiencing real life marketing is completely different to studying it, it’s very true. I’ve learned so much from interning here so far, and I’m glad that I was offered the position to work in house with Rusk & Rusk’s marketing team as I’ve learned so much not just about marketing, but also about events and how businesses work in general. During the time I’ve worked here so far, I’ve experienced 2 Summer Parties, the Rich Picnic (both in association with Veuve Clicquot) and the relaunch of Hutchesons City Grill.

My weekly tasks include writing blogs for the restaurants, providing review reports, scheduling posts for social media, updating the databases with data capture, forward planning ideas, live tweeting / posting photos on the Instagram stories at events and photographing the specials / any important dishes.

One thing that has been especially excellent for me personally is being able to develop my photography skills. I’ve been an avid photographer since the age of 8, constantly looking to document things through photographs, and this position has taught me so much about photographing food and events. It’s also one of the first jobs where I’ve felt genuinely appreciated for my hard work, which is so rewarding for me and has certainly improved my confidence.

When I was offered the opportunity to come on part time as a Marketing Assistant following the end of my internship, I was thrilled. Rusk & Rusk is such an exciting company to work for. They are continuously evolving with the times and have proven themselves to be an extremely innovative and creative lifestyle brand. They provide more than just a memorable experience within their restaurants, they also give it a personal Rusk & Rusk touch.

If there’s one thing I’ve learned while working at Rusk & Rusk, it’s that hard work absolutely does pay off. Being offered the opportunity to intern here has been incredibly rewarding in so many ways for me, and I thank my lucky stars that I applied for the position in the first place.

Glasgow Food Heroes: James & Louise Rusk speak to Glasgowist

James and Louise Rusk have made their mark on Glasgow’s food scene with The Butchershop Bar and Grill, Hutchesons and The Spanish Butcher. The last of these restaurants is where we find them, sat together with a coffee, ready to start a busy day.

Their focus for the last few weeks has been on a major refurbishment at Hutchesons, which has unveiled a stylish new-look for their flagship venue as they introduce The City Grill and 158 Club Lounge.

It’s been a progression from their first location, a neighbourhood steak joint in the West End, into the city and they plan to continue to grow their business. Glasgowist sat down with Louise and James for a chat about the story so far.

RUSK & RUSK unveil The City Grill & 158 Club Lounge at Hutchesons

Renowned Glasgow venue, Hutchesons, is set to receive a makeover this summer as operators RUSK & RUSK seek to bolster its reputation as one of Scotland’s flagship restaurants. 

Initially redeveloped into a glamorous bar & restaurant bar by owners, James & Louise Rusk, in 2014 when they took on the ambitious task of transforming one of Glasgow’s oldest and most recognised architectural icons into a marquee dining destination. 

An instant hit on the cities burgeoning restaurant scene, Hutchesons has garnered a reputation as being one the most fashionable venues in the country with it’s Scottish inspired menu, unique interiors and lavish events. It’s that initial success that has inspired RUSK & RUSK to press ahead with a refresh of the concept, co-founder James Rusk explained that “for us, it’s about making sure we never rest on our laurels. Hutchesons has been a massive hit in its formative years, and in order for us to continue that success, we need to make sure we are constantly evolving with the times and we see now as the perfect opportunity to create a new-look Hutchesons”.

The restaurants in the RUSK & RUSK estate have become synonymous for their style, interior design and decor; their latest venture, The Spanish Butcher sports a modern, New York loft-inspired interior whilst legendary steakhouse, The Butchershop, is a throwback to the classic hustle & bustle of midtown Manhattan. The grandeur of the Grade-A listed building that houses Hutchesons is an exciting canvas for the group to work with, co-founder Louise Rusk describes the project as “an opportunity to further enhance what is an already gorgeous restaurant”. The new Hutchesons will feature a renovation of the main dining room which will sport the title ‘Hutchesons City Grill’, whilst the ground level Champagne bar will be transformed into ‘The 158 Club Lounge’ and will sport a stylish boutique ambience. On the subject of the motivation behind the project, Louise told us that “we will retain that special aura that Hutchesons has, whilst taking a new approach to the interiors, giving it a refreshing makeover”.

RUSK & RUSK are regularly touted as being Scotland’s authority on beef, and across their restaurants they pride themselves on serving some of the finest cuts of steak to be found anywhere in the world. Whilst Hutchesons already boasts a reputation for great steak, the new concept allows the venue to push the boundaries on their current offering by introducing a greater variation of cuts along with guest steaks sourced from the finest breeds of cattle across the world, however Scotch beef will remain the staple of the venue.

Champagne lovers also have no reason to worry, whilst the Champagne & Oyster Bar will renamed to The 158 Club Lounge, bubbles will still be at the forefront of the menu, along with a revamped cocktail list that uses ingredients such as aged rums, whiskies and sake’s to create innovative drinks. Louise Rusk is quick to point out that “Hutchesons has become the leading outlet for Champagne in Scotland, with our events and parties causing a splash as far away as London, and we’ll continue to do so. We have an affinity with Champagne, in particular Veuve Clicquot, and we’re excited to further cement ourselves as one of the UK’s leading Champagne sellers”.

The refurbishments take place over a two week period in mid-July and will be complete in time for the launch of this years Merchant City Festival on Friday July 21st, and guests can expect a number of events and parties to coincide with the re-launch.
